"Reverse Chameleon" is a much better name for this than "Chameleonscaper", by the way.
The name did occur to me, but I felt it was too on-the-nose.
The malnutrition and vitamin deficiency - those are because everything the chameleon comes in contact with is just more of herself.
Not necessarily so. The SCP only transmutes its surroundings when in an agitated state; when the SCP is content and happy, its surroundings - and therefore, its food - remain normal. The SCP was in poor health upon discovery because it was being so poorly taken care of. I'm updating the entry as we speak to make this more clear.
What happens if she lays eggs? Will they all be female?
To my knowledge, female chameleons can't bear offspring from unfertilized eggs (although some lizards can). The SCP would presumably be able to mate with a male of the same species, and lay eggs that would hatch into a clutch of mixed-sex offspring.
